2 lb. Pork butt or shoulder
2 clove garlic, chopped
1 onion, thick julienne
1 tomato, large dice
1 T white distilled or apple cinder vinegar
2-3 T salted shrimp fry (bagoong)*
1 c water
sugar & pepper to taste
Fish sauce (patis) to taste
Brown pork with garlic
add vinegar, water, cook until tender
add bagoong, and onion, cook through
add tomato, sugar, pepper and patis until seasoned to taste
serve with rice
*if cannot find, can substitute 1/4c bay shrimp and 1/2c water for 1/2 c shrimp or seafood stock; may need more salt & patis
