1/2 c watermelon chunks, pureed
2 T olive oil
1 T white wine or champagne vinegar
salt and pepper to taste
1-2 clove garlic
1-2 stalk lemongrass
2 shallots
1-2 small red or green chiles
1 T cilantro
1/4 c fish sauce
lime or lemon juice can be substituted for lemongrass
add sugar to taste and 1/4c oil to use as salad dressing
8 T olive oil
2 T lemon juice
1t patis
1 clove garlic, minced
combine all ingredients, season with salt and pepper in necessary
drizzle on romaine
